Noma co-founder Claus Meyer is about ready to open his waterfront jazz club/restaurant/bar concept, The Standard. According to the website, The Standard will open on Thursday, October 3. The concept comprises a jazz club and three restaurants: Studio, Almanak, and Verandah. The Standard replaces the Custom House Bar & Grill in Copenhagen and apparently is still making changes to the building's exterior.
Studio will is a "gastronomic New Nordic restaurant" located on the ground floor of the two-story building, and the chef is Torsten Vildgaard. Vildgaard was at Noma for eight years, four of which he spent as the creative head chef. He is quoted on the website saying: "At noma, from 2005-2012, I was deeply involved in the development of new dishes, and at Studio I will carry on this tradition, collaborating with our close suppliers to develop dishes that represent our nature and that no-one has tasted before – and hopefully many will want to taste again." There is an a la carte menu along with five and seven course tasting menus. The seven course menu is DKK 895 (roughy $162.51) and the opening menu includes dishes like Stuffed Quail and truffles with sweet onions and Pan Fried Foie Gras with blackberry, aromatics and rye baked beetroot.
Almanak is a "modern Danish bistro" on the ground floor and the chef is Andreas Møller. The restaurant aims to be "informal and friendly" and will focus on "what is in season right now." Breakfast and lunch are offered, and the dinner menu is mostly a la carte. There is also a three course prix fixe for DKK 350 ($63.55). Main courses on the opening dinner menu include Fried Deer, Braised Oxtail, and Baked Cod.
Verandah is a "contemporary gastronomic Indian restaurant" also located on the ground floor. The restaurant will be helmed by chef Karam Sethi of London's Michelin-starred Trishna with ex-Osteria dell'Arancio (Grottammare, Italy) pastry chef Rizwana Merchant. The restaurant will have a bar and lounge and a dining room that focuses on four and six course tasting menus. The opening six course menu is DKK 575 ($104.41) and features dishes like Guinnea Fowl Tikka and Lamb Curry.
This isn't Meyer's first post-Noma restaurant project. Meyer (now a minority partner at Noma) also owns Gustu in La Paz, Bolivia. Gutsu opened in April 2013.
