Someone recently asked on eGullet if they could do sous vide in a hot tub, and the answer is... maybe! British chef Heston Blumenthal cooked a whole hog sous vide in a hot tub back in the spring of 2009 on the show Heston's Feasts, so we know it's at least technically possible! The key is apparently finding meat that comes in a vacuum-sealed plastic bag, and also jerry-rigging your hot tub to run much hotter than normal. Maybe you better leave it to the professionals, after all? Said Blumenthal: "This might seem like a rather gimmicky way of cooking a pig, sticking it in a hot tub." Well, yes. Yes it is.
